Basic Pumpkin Spice Chocolate Chip Cookies

It’s fall!!! I love fall so much and I have a favorite super easy recipe for the perfect fall cookies! They’re my pumpkin spice chocolate chip cookies. Let’s all be super basic here friends and see how many Ugg boot and LuLaRoe references we can make… I’ll wait.

That was enough time and I really want to get started on these cookies! So, fun fact with these is that they are another “muffie” type cookie. They’re fluffy, delicious, and versatile! You can use this exact recipe and make muffins with these as well- I just like cookies better 😉

So, not only are these cookies basic because of their pumpkin theme, they’re basic because there are only 3 ingredients in them. Nothing scary about these as you kinda just throw everything into a bowl and mix by hand. This recipe yielded about 27 cookies for me, but I admittedly have a portion control issue. Realistically it should give you at least 30 cookies.

First start by pouring out the spice cake mix into a large mixing bowl and use a fork to break up some of the bigger chunks. Then empty out the can of pumpkin puree right into the cake mix and stir. (This part is very therapeutic to me. I think its a mix of textures thing, but I don’t really know. Favorite part though haha) Once the pumpkin and cake mix is completely mixed, add the chocolate chips. I had someone tell me that white chocolate chips would be really good with pumpkin, but I also feel like white chocolate is the grossest chocolate… So I ignored that advice. I tend to always go with semi-sweet, but it turns out milk chocolate chips are heavenly with the pumpkin. Whatever you choose- trust your heart. You really can’t mess this recipe up. 🙂

Once everything’s mixed together, scoop the dough onto a non greased baking sheet lined with a silicone baking mat or parchment paper. Pop that in the 350F oven for around 15-18 minutes depending on how big you made your cookies. The toothpick test should work great for you here as you probably don’t want gooey pumpkin. Put those beauties on a cooling rack for a few minutes and enjoy!

For best results, use a silicone baking mat and a cookie scoop to help keep your cookies a proportionate size. Keep in mind, your yield and bake times will vary based on the size of your scoops.

  • 1 bag Chocolate Chips 12oz bag

Recipe Notes
  1. Preheat oven to 350F
  2. Combine the box of spice cake mix with a can of pumpkin puree.
  3. Stir in the chocolate chips by hand.
  4. After laying the silicone mat (or parchment paper) on a non-greased baking pan, use your cookie scoop to make the cookies about the same size.
  5. Bake for 15-18 minutes or until a toothpick comes out clean.
  6. Cool on baking sheets for 2 minutes and then move to wire racks to finish cooling.
  7. Grab the milk and enjoy!
